MOIC-approved DIY Pink Vegan Popsicles

This summer is getting to be a hot one, so we pulled out a super easy, MOIC-approved recipe for a quick vegan treat on scorching days that you can try making with your friends! We made sure that this would be an easy recipe that you can do at home, with ingredients that are as health-conscious and as good for you as they taste!

You’re going to need:

  • 1 ½ cup of oat milk
  • 1 ripe banana
  • 1 cup frozen berries
  • Parchment paper
  • Baking pan
  • Popsicle sticks
  • A blender

  1. The first step is going to be a little bit of prep work that we recommend doing a few hours before you want to make your popsicles! Peel and slice your ripe bananas into chunks and place them in the chiller to freeze up. We want to cut them up because it will be easier to blend!

  1. Combine the frozen bananas, frozen berries, and oat milk in a blender and pulse to blend smooth. You can certainly leave it a little bit chunky if that’s what you like, but all the ingredients need to be mixed well!

  1. Now you’re going to need to prepare your baking pan, which is going to act as an easy mold for your popsicles (try to use a pan with walls at least 4 inches high, but you can certainly use whatever high-walled dish you have on hand. Cut a rectangular piece of parchment paper that can fit inside the pan with some overhang over the sides. This is going to help you pull out your popsicle block from the pan once it has frozen (trust us, this comes in handy later!).

  1. Once your pan has been prepared, carefully pour your popsicle mix into the pan. Tap the pan lightly on a flat surface to pop any air bubbles, then stick it in the freezer for at least 2-3 hours!

  1. About an hour into the freezing process, take the pan out of the fridge and prepare your popsicle sticks. By this time, your popsicle mix should have become a semi-firm sludge, which is the perfect consistency to put in your popsicle sticks. At evenly spaced intervals, push your popsicle sticks ¾ of the way into the pan so that you’ll still be able to hold it upright once the mix has been frozen and cut!

  1. After about 3 hours, remove the pan from the fridge and lift the solid block of ice cream from the pan using the parchment paper sticking out from the sides (see, we told you it would come in handy!). Place your popsicle block on a chopping board and use a kitchen knife to cut the block into individual popsicles.

Now look at that! With less than 10 minutes of work (and about 3 hours of freezing), you have the most refreshing, pinkest vegan popsicles that you can make in the comfort of your kitchen. Feel free to add in any ingredients you think you’d like – if you’re looking for something a little boozy (if you’re legal, of course!), we recommend sneaking a dash of rum into the blender before starting to mix!
